Cheesy Chicken and Rice

 Cheesy Chicken and Rice 1 lb chicken (cubed) olive oil salt & pepper Stir over heat to cook chicken. Add more salt & pepper 1 t. chili powder 1 t. cumin 1 T. minced garlic cook until fragrant  Then add: A bit more olive oil 10 oz can diced tomatoes 8 oz can tomato sauce 1 1/2 cup chicken broth 1 cup uncooked white rice stir and allow to simmer for about 20 minutes

Chocolate Drizzle

 Chocolate Drizzle 1 1/4 cup cream or half and half 2 T. butter 1/2 t. vanilla Heat together to melt butter. --- Then slowly whisk in: 3/4 cup sugar 1/2 cup cocoa powder 1 1/2 T. flour --- Stir constantly for 6 minutes. Whisk in a pinch of salt.  Drizzle over cake.

Ginger Cookies

A Christmas recipe dedicated to Tony Henderson (1962-2023) Blend together: 1/2 cup butter 2/4 cup brown sugar 1 t vanilla Add 1 large egg Then add  1/4 cup Molasses In separate bowl mix:  2 cups flour 1 t ginger 1t baking soda 1 t cinnamon  1/2 t cloves 1/2 t baking powder 1/4 t salt Mix dry into wet.  Press together into a disk shape. Refrigeratorate for 2 hours.  With powdered hands, roll into 1" balls. Roll balls into rough sugar. Place on greased baking sheet 2" apart.  Press into 1/2" flat. Bake at 350 for 9-15 minutes.  Enjoy!

Skillet Chicken and Sweet Potatoes

 1 lb boneless chicken thighs 1 t. salt 1.5 lbs sweet potatoes, cut inot 1/2 inch pieces 2 T. avocado oil 2 T. butter 2 T. honey 1 t. taco seasoning (optional) 1 clove garlic Heat oven to 350. Sprinkle chicken with salt.  Heat 1 T. avocdo oil in skillet (ideally cast iron), add chicken and allow to brown for about 3-4 minutes each side. Remove from heat and set aside. Turn heat down a bit.  Add remaining avocado oil and add sweet potatoes. Sprinkle with salt. Brown for about 5 minutes, stirring frequently. Meanwhile, melt butter, honey, taco seasoning and garlic (microwave is good).  When potatoes are ready, return chicken to skillet along with any juices. Pour honey mixture overtop. Mix.  Bake until chicken is cooked (10-20 minutes). 

Spaghetti Pizza

 Spaghetti Pizza I saw this recipe on Anthony Bourdain's Part's Unknown in McDowell County, West Virginia. A local said it was just a Betty Crocker recipe which I found. I'm not convinced this is the same dish as was served to A. Bourdain. Jesse wasn't too excited about it. But I thought it was an easy alternative to making pizza dough. It does require eating with a fork. "crust" 1 lb. uncooked spaghetti 2/3 cup milk 2 eggs 1/2 t. salt 1/2 t. garlic salt 1 cup shredded cheddar 1 cup shredded mozzarella toppings 1 jar marinara 6 oz pepperoni 1 cup cheddar 1 cup mozzarella Heat oven to 400. Grease 15x10" pan. Cook, drain and rinse spaghetti. In a small bowl, whisk milk, eggs and seasons. Add spaghetti and cheeses. Stir by hand. Pour onto pan. Spread evenly. Bake 15 minutes. Reduce over to 350. Top the crust. Bake for 20-25 more minutes. Serve immediately. 

Fettuccine for the Road

 Fettuccine for the Road This is so simple. I can be made anywhere. 1 lb. fettuccine 1 bag of bacon bits (or 6-8 slices of bacon chopped and cooked) 1 jar of Alfredo 1 can of diced tomatoes Cook the pasta. Combine the other ingredients in a skillet and heat. Add the cooked pasta. I think this could have mushrooms or spinach added too. 

Hot Honey Chicken (Slow Cooker)

 2 lbs boneless chicken thighs 1/2 t. salt Sauce 1/3 cup honey 2 T brown sugar 1 T white vinegar 2 garlic cloves minced 1/4 t. salt 1/4 t. red pepper flakes pickles buns Mix the sauce. Put chicken in slow cooker. Sprinkle evenly with salt. Pour 1/2 the sauce (1/4 cup) on chicken and coat. Save the remaining sauce. Cook for 4 hours on low. Remove chicken to cutting board. Save 1/4 cup liquid and discard the rest. Shred the chicken, returning it to the crock pot to warm. Add all remaining liquid. Stir and warm. Serve on buns with pickles.
