Apple Pecan (or
almond) Muffins
1¼ c flour
1 t. baking soda
½ t. cinnamon
1/8 t. salt
1 c. sugar
½ c. veg. Oil
1 large egg
2 T. lemon juice – fresh is best
1½ t. vanilla extract
¾ t. grated lemon peel
2 c. coarsely grated peeled green apples (about 2 large
apples)
½ c. chopped pecans or almond
Grease ½ c. muffin cups.
Sift flour, baking soda, ground cinnamon and salt into med bowl. Combine sugar, oil, egg, lemon juice, vanilla
and lemon peel in a large bowl; whisk to blend.
Mix in dry ingredients, then apples and nuts. Spoon 1/3 cup batter into each prepared
muffin cup. Bake until tester inserted
into center comes out clean, about 35 minutes.
Turn muffins out onto rack; cool slightly.
