Raspberry Chicken
1 t oil
1/2 cup chopped red onion
1/2 t. thyme
1/2 t. salt
16 oz. boneless, skinless chicken breasts
1/3 cup seedless raspberry preserves
2 T balsamic vinegar
1/4 t. black pepper
Heat oil in lg nonstick pan. Med. high heat. Add onion, saute 5 mins. Sprinkle thyme and 1/4 t. salt over chicken and add to pan. Saute 5-6 minuts each side until done. Remove. Add 1/4 t. salt. preserves, vinegar and pepper. Stir until preserves melt. Spoot over chicken and serve.
