Each Monday, on Marshall University’s campus, a church
takes a turn making lunch for about 100 students and faculty. I’m in charge when the Marshall Catholic
Newman Center is cooking. I was in need
of a quick and easy recipe for biscuits.
I called my mom the morning of our lunch to ask what she recommended. She found this recipe in her Good
Housekeeping Cookbook. I was amazed
how easy and scrumptious these biscuits are.
Drop Biscuits
2 cups flour
1 T. baking powder
1 t. salt
¼ cup shortening
1 cup milk
Preheat oven to 450.
With fork, mix flour, baking powder and salt. With fork, mix flour, baking powder and
salt. With two knives used scissor
fashion cu t in shortening until mixture resembles coarse crumbs; add milk.
With fork stir dough until well mixed.
Onto ungreased cookie sheet drop heaping tablespoonfuls of mixture 1
inch apart; or fill greased muffin pans half full. Bake 12 to 15 minutes till golden brown.
Makes about 20.
