have this recipe.
Golden Pumpkin Soup
1 small to medium sized pumpkin.
3 green onions, finely sliced
2 T. butter
1 c. grated carrot
1 t. cumin
1 t. ginger
1 can creamed corn
salt and pepper to flavor
Remove the seeds and stem from the pumpkin. Cut the meat into 3” squares. In a large kettle, cover the pumpkin squares
with water and bring to a boil until the pumpkin is soft. Drain and allow to cool. Cut off skin.
Use a food processor to mash the pumpkin.
Melt butter
in a saucepan and put in the carrot, corn and pumpkin. Stir in the remaining ingredients and simmer
for 8 – 10 minutes. Serve garnished with
chopped green onion.
Note: Skip
preparing the pumpkin by using canned pumpkin adding 2 or 3 cups of water.
