Herbed Broccoli Sandwich (Simply in Season by World Community Cookbook)
Such
a simple seasonal meal.
2 cups broccoli,
finely chopped
½ cup onion
Saute in 2 T.
oil until broccoli is bright green
Add:
A pinch of dried
basil or fresh thyme
½ t. salt
Remove from heat
and put broccoli on nice French or other bread.
Sprinkle good
cheese over top and broil to melt. Serve
immediately.
