Braisen Celery with Lentils and Eggs
1. Cook a batch of lentils (about 2 cups cooked)
2. Dress lentils:
- 1/8 cup olive oil
- 1/8 cup red wine vinegar
- 1/4 t. honey
- 1/4 t. paprika

3. Cut celery in 3"x1/2" then cook in 1/4 cup olive oil
4. Add 6 cloves of garlic and cook for 5 minutes
5. Add 1/2 cup wine and fresh herbs (rosemary, thyme or sage), cook for 2 minutes
6. Add lentils, broth or water and heat.
7. Top with fried egg
