This is a shortcut recipe but it’s good and easy (hence the shortcut). Terri gave me this recipe. She got it from the back of Maxwell House instant cappuccino. I use any brand or flavor.
Cappuccino Biscotti
2 cups flour
2 helping of instant flavored cappuccino – dry
1½ t. baking powder
½ c. butter or margarine – soft
¼ t. salt
¾ c. sugar
2 eggs
1t. vanilla
1 c. chopped nuts
Heat oven to 325. Mix
cappuccino, baking powder and salt. Beat
butter, sugar, eggs and vanilla in large bowl on medium until well
blended. Gradually beat in flour
mixture. Stir in nuts. Divide dough into 2 equal portions; shape
into 2 (14 inch) logs on lightly floured surface. Place 2 inches apart on greased and floured
cookie sheet. Bake 25 minutes or until
lightly browned. Remove from cookie
sheet. Cool 5 minutes. Cut logs diagonally into ¾ inch slice. Place on cookie sheet ½ inch apart. Bake 10 minutes or until slightly dry. Makes about 2 dozen.
