This is a really good, and very easy appetizer or
meal. I change or substitute many
things. Add mushrooms, spinach, green
pepper and jalapenos. Drop the chicken
and make it vegetarian (good for Fridays of Lent).
Cheesy Chicken
Quesadillas
1/2 cup cooked chicken
1 cup cooked rice (seasoned or unseasoned)
2 flour tortillas
1/8 cup ripe olives
1/2 cup shredded cheese (cheddar, pepper jack, Mexican any
or all)
salsa
sour cream
Heat oven to 450.
Spray both sides of the tortillas with nonstick cooking
spray. Place one tortilla on a baking
sheet. Top each tortilla with cooked
rice, olives and cheese. Top with remaining
tortilla. Sprinkle with remaining
cheese. Bake 5 – 7 minutes or until
light brown. To serve, cut into wedges.
Top with salsa and sour cream.
