Crab with Red Pepper Sauce
1 large red bell pepper, cut into fourths
1/8 t. salt
10 drops red pepper sauce
1 clove garlic finely chopped
¼ cup plain yogurt
1 lb crab meat
¼ cup sliced green onions (2 or 3)
Fresh cilantro leaves
Place steamer basket in ½ inch water in saucepan or skillet
(water should not touch bottom of basket).
Place bell pepper in basket.
Cover tightly and heat to boiling; reduce heat. Steam 8 – 10 minutes or until tender. Place bell pepper, salt, pepper sauce and
garlic in blender or food processor. Cover and blend on medium speed, or process,
until almost smooth. Heat pepper sauce
in 1 quart saucepan over medium heat, stirring occasionally, until hot; remove
from heat. Gradually stir in yogurt;
keep warm.
Spray pan with cooking spray. Heat over med-high heat. Add crab meat and onions to pan. Stir-fry 4 – 5 minutes. Serve scallops with sauce. Garnish with cilantro.
