When we took the family trip to Nova Scotia in 1995 I
bought a cookbook, Out of Old Nova Scotia Kitchens (Nimbus Publishing
Limited, 1989). My favorite kind of
cookbook, one that tells the stories of the recipes within. Here’s one old recipe…
Scotch
Oats
4 cups rolled oats
1 cup brown sugar (or maple sugar)
2/3 cup melted butter
Spread the rolled oats on a flat shallow pan, together with the brown
sugar which has been rubbed in with the fingers. Add the melted butter and stir to
moisten. Put in a very hot oven for 10
minutes or a slower oven for 20-30 minutes.
Store in glass jars.
Note: This will burn easily in a
hot oven so must be stirred occasionally.
